Quinoa Kimchi Bowl


1 cup quinoa
1 cup water
1 cup chicken/vegetable stock
 1  small beet (grated)
 1/4  red pepper, sliced
 2  romaine lettuce leaves, sliced
 3 oz  grilled chicken
 2 tbsp  kimchi


  1. Cook quinoa in water and stock for 15-20 minutes.
  2. Put quinoa in a bowl and arrange the raw vegetables over the top. Add chicken and cover with kimchi.
  3. Serve and enjoy!
