
Quinoa Kimchi Bowl
Ingredients
1 cup | quinoa |
1 cup | water |
1 cup | chicken/vegetable stock |
1 | small beet (grated) |
1/4 | red pepper, sliced |
2 | romaine lettuce leaves, sliced |
3 oz | grilled chicken |
2 tbsp | kimchi |
Recipe
- Cook quinoa in water and stock for 15-20 minutes.
- Put quinoa in a bowl and arrange the raw vegetables over the top. Add chicken and cover with kimchi.
- Serve and enjoy!
