
Pumpkin Spice Overnight Protein Oats
Ingredients
1 1/2 cups | coconut milk |
1/2 cup | pumpkin puree |
2 tbsp | maple syrup |
1 tsp | vanilla extract |
1/2 tsp | cinnamon |
1/4 tsp | powdered ginger |
dash | nutmeg |
pinch | salt |
1 scoop | Kaizen Naturals® Vegan Protein Vanilla |
1 cup | rolled oats |
Toppings (optional)
vanilla yogurt |
pumpkin seeds |
Recipe
- In a medium-sized, sealable container, mix coconut milk, pumpkin puree, maple syrup, and vanilla.
- Add in cinnamon, ginger, nutmeg, salt, protein powder, and oats. Stir well until combined.
- Cover with lid and let sit for at least 30 minutes or store in the fridge overnight.
- Once ready, top with yogurt and pumpkin seeds. Enjoy!
